Flavour Flamboyance: Two Regional Indian Recipes Worth Bringing to the Table

A memorable dinner does not always need elaborate plating or an endless menu. Sometimes, two deeply rooted dishes can create more impact than a table crowded with choices.

For Chef Rakesh Kumar Sharma, Executive Chef at IRA by Orchid Hotels, Noida, flavour works best when it carries a sense of place. With more than 19 years in hospitality, including leadership roles at Radisson Hotels, Park Plaza, The Fern Hotels & Resorts and Evolve Back, his approach brings traditional recipes together with contemporary hospitality.

For a celebratory dinner at home, he turns to two very different regional classics. Laal Maans brings the heat and depth of Rajasthan, while Thalassery Chicken Biryani offers the gentler fragrance of Kerala’s Malabar coast.

Together, they make a convincing case for letting heritage take centre stage.

Laal Maans: Rajasthan, Served With Heat

Laal Maans has never been a shy dish.

Traditionally associated with Rajasthan, the mutton curry builds its character around red chillies, slow cooking and a gravy where spice does not need tomatoes to create depth. Chef Sharma describes it as carrying the spirit of Rajasthan’s royal and hunting traditions, where game was cooked over fire with an assertive chilli paste.

For a dinner party, it brings instant drama to the table. Serve it family-style in a handsome serving bowl, with bajra roti for a more traditional pairing or steamed rice when you want the gravy to remain the star.

Thalassery Chicken Biryani: A Softer Kind of Celebration

If Laal Maans announces itself, Thalassery Chicken Biryani draws you in more quietly.

The Malabar speciality uses Jeerakasala or Kaima rice, rather than the longer grains commonly associated with many other biryanis. Its appeal lies in aroma and balance rather than a heavy hand with masala. Ghee, fresh herbs and layered chicken create richness without overwhelming the rice.

Its history also reflects the Malabar coast’s longstanding connections with Arab trade, and the dish remains closely associated with weddings and festive tables.

For entertaining, it works beautifully as the centre of the meal. Bring the whole pot to the table and let the aroma make the introduction.

When the Menu Needs Fewer, Better Dishes

Both recipes prove that an impressive dinner table does not need to chase novelty.

Laal Maans brings intensity, history and a distinctly Rajasthani character. Thalassery Chicken Biryani answers with fragrance, layering and the softer richness of the Malabar coast.

For a festive gathering, serve either as the centrepiece rather than one among dozens of competing dishes. Add thoughtful accompaniments, beautiful serveware and enough time for guests to linger.

Because the most successful entertaining rarely comes down to how much you put on the table. It is about choosing the dishes people will still be talking about when the plates have been cleared.
