A meal inspired by 1947 could easily become an exercise in nostalgia. At Hyatt Regency Pune & Residences, the more interesting idea was to use food as a way into memory.

On 15 August, the Regal Celebrations team attended Back to 1947: The Taste of Freedom, a special Independence Day brunch at the hotel in Viman Nagar. Rather than treating the national holiday as a decorative theme alone, the experience looked to the India of 1947 for its visual and culinary cues.

The result was less about recreating a precise moment in history and more about evoking one. Tricolour accents, period-inspired references and a spread built around Indian flavours gave the afternoon a sense of occasion, while the familiar ease of a hotel brunch kept it firmly in the present.

For a celebration centred on something as expansive as Indian identity, that balance mattered.

When Food Becomes the Story

India’s culinary landscape resists easy summarisation. Regional ingredients, family recipes, community traditions and local techniques mean that there is no single flavour that can represent the country.

Back to 1947 worked best when it acknowledged that plurality.

The spread moved across regions and styles with ease. There was maa ki daal, laal maas, mutton curry, crisp fish fry, veg Manchurian and paneer tikka. A pistachio and pumpkin salad added a lighter note. Khao suey brought another layer of flavour. Live counters for dahi wada, pani puri and pasta added an interactive touch.

The dessert counter was one of the highlights. It stood out for both variety and presentation. A Tiranga tricolour cake tied the spread neatly to the Independence Day theme, adding a playful visual note without feeling overdone.

Rather than attempting to recreate a strictly historical 1947 menu, the brunch used food as a way to reflect the diversity that defines Indian dining today. The event brought children from diverse backgrounds together on one platform to promote a powerful message of love, acceptance, and equal opportunities.

The Visionaries Behind the Velvet Rope

Event curators Imran Rahman and Neha Choudhary conceptualised the inspiring evening. They successfully turned a meaningful social cause into a high-energy fashion experience. The production team ensured that every child on the runway could shine with absolute confidence.

The runway thrived on the creative talents of three industry experts:

  • Kirti Agarwal: The designer created bespoke pieces that reflected the individuality and spirit of each participant. Her elegant designs gave a special identity to every child.
  • Sandip Soparrkar: The renowned fashion choreographer brought his signature brilliance to the runway. His expertise guided the children to walk with incredible energy.
  • Shikha Goel: The image consultant and founder of Enhance with Shikha Goel worked closely with the participants. She enhanced their overall presentation and boosted their personal confidence.
